#whatsCTpulling : Timana Colombia from Sweet Bloom Coffee Roasters
I don't know why, but at least to me, Colombian coffee often times seem overshadowed by their more exotic (sounding) counterparts. Maybe it's because they're generally not as expensive, or don't have really outstanding transparency of some washed African's, but every now and then I order a Colombian and it's like seeing an old friend, or having a meal that you know is just good. Straight forward, no frills, just damn good. Timana, from Sweet Bloom is one of those Colombians, with brownie batter aromatics, citrus liked acidity, and brown sugar sweetness that delivers.
As espresso, it made for good shots, but I really felt like it shined as a base for milk drinks. It held up well to 8 ounce lattes, and made a nice rich cappuccino. The brown sugar and brownie batter like sweetness played off the milk well, and it had just a hint of fruitiness too. Shots were fairly typical, pulled at 18 grams in to 36 grams out in 30 seconds at 202*F.
Brewed on the V60 didn't necessarily bring about any nuanced or overly transparent flavors but just very flavorful, rich, sweet, and smooth cups, the kind you could keep drinking and it's always there tasting good... that old friend. I found the coffee to strike its best balance when brewed at:
- 1 : 16 or 20 grams in to 320 grams out using 203*F water from the Bonavita Temperature Controlled Kettle
- 3x coffee weight (60 gram) bloom, agitated to wet all grounds, 35 second total bloom time
- Steady pour to 250 grams, stir
- Remaining steady pour to finish weight, swirl the brewer.
- Total brewing time of 2:30 - 2:45
